Sodium acetate is the salt of acetic acid, which is commonly used as a preservative, flavour enhancer and buffering agent. It is a white, crystalline, water-soluble substance that has a slightly salty taste and a neutral pH of about 7. It is often used in heating pads because it releases heat when dissolved in water.
