Tallow is a hard fatty substance obtained by rendering animal fats, especially beef and mutton. It is a traditional ingredient in the manufacture of soap and candles and has a wide range of uses in the food industry, including as an ingredient in baked goods, fried foods and dairy products. Tallow is rich in stearic acid, a saturated fat that is solid at room temperature and has a high melting point, making it useful as a butter substitute in some applications.
